I had the privilege to stagier at Gachi Ramen in Shinjuku, Tokyo in October 2014. A friend of mine who writes a weekly ramen article for a major publication in Japan connected me with Ramen Master Shono Tamaharu. Shono has been in the ramen game his entire working life and owns 5 Ramen Shops as well as a Production Kitchen in Tokyo. Gachi's focus is Tsukeman Ramen where you dip noodles etc. in a separate bowl of very rich broth...Absolutely delicious! A mind blasting experience to say the least and I am very great full to Shono and his team for teaching me the way of Tsukeman Ramen....
