Back in 2011 my wife and I had a trip booked to Taiwan, but when we reached the airport to check in they would not let me board the plane as my passport was to expire in 5 months. Anything within 6 months of expiration they will not let you in the country. Needless to say my wife was livid and I had to fix this ASAP....
Time warp to a few days later and we ended up in Tokyo for a mini 4 day improv vacation (which turned out to be amazing). It was on this trip were I became intrigued with Ramen and the massive tradition that it had in Japan.

Above is the name of the restaurant where I had my first bowl of authentic ramen. It was a pork shoyu (soy seasoned) base with rolled pork shoulder, perfect egg ,and a ton of raw (but soaked in water to remove edge) white onion. From that moment on I found a new passion in the kitchen and today I continue to learn and remain the GBC resident ramen head. :)
