Flash back to Singapore 2010, I was there for 5 days doing an event for the Australian Consulate and was doing all my prep at Ku De Ta restaurant (Thanks to Chef Dan Segall) at the top of the Marina Bay Sands Hotel. After the event I wanted to hit the black jack tables in an attempt to make some quick cash before we we went out on the town that night. I was up $400 after an hour or so, and true to fashion I cashed out ASAP and told my buddy lets go enjoy this money at the michelin star studded restaurant line up at the Casino. First we went to Santi Santamaria and had an incredible tapas tasting menu. Still hungry of course, we went to Hide Yamamoto and was unsure on what to order as they offered a board selection of Japanese Cuisine....We decided on Ramen! I was taken back by the price of $30 because I have never paid more then $15 for a bowl. I normally eat pork based ramen and was I little nervous about the seafood version (Sapporo style). The ramen had fresh lobster and scallops with a rich shell fish broth and all the classic garnishes. I asked myself after the empty bowl was staring back at me...was it with the hefty $30?? Absolutely and if I'm ever back in Singapore Hide Yamamoto will be seeing me again most definitely.
